Abalone Sashimi with Fruit Salad
Ingredients (4 servings):

  • 4 pieces Ausab Australian Greenlip Abalone meat
  • 2 kiwifruit, diced into 5mm cubs
  • 1 mango, diced into 5mm cubs
  • 8 tablespoons lemon pressed olive oil
  • Juice of 1 lemon
  • A few shiso leaves for garnish
Preparation:

  • Slice the abalone meat in 2mm thick at an angle down and to the left. Slice through the whole meat from left to right.
  • Mix the kiwifruit, mango and lemon pressed olive oil. Add the lemon juice.
  • Arrange the sashimi on a plate or in shell. Serve with the fruit salad mix and shiso leaves.
